Balsamic and Mustard Brussel Sprouts
Crispy on the outside and tender inside, these tangy Dijon-balsamic Brussels sprouts make the perfect zesty, flavorful side dish.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 6 cups Brussels Sprouts, halved
- 2 tbsp. Extra-Virgin Olive Oil
- 1 tbsp. Ideal Protein Balsamic Vinegar
- 2 tsp. Dijon Mustard
- 2 tsp. Lemon Juice
- Salt and Freshly Ground Black Pepper, to taste

Preparation
Step 1
Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
Step 2
In a large bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, lemon juice, salt, and pepper.
Step 3
Add the halved Brussels sprouts and toss until evenly coated.
Step 4
Spread Brussels sprouts in a single layer on the baking sheet.
Step 5
Roast for 20–25 minutes, turning halfway through, until tender and caramelized on the edges.
Step 6
Remove from the oven, toss lightly in any remaining dressing if desired.
Step 7
Serve warm. Enjoy!
