
Balsamic Grilled Eggplant
Smoky, tender, and tangy — this grilled eggplant side brings balsamic magic to your plate.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 (1 lb.) Large Eggplant, Unpeeled
- 1 tbsp. Olive Oil
- 1 tbsp. Ideal Protein Balsamic Dressing
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- ½ tsp. Garlic Powder

Preparation
Step 1
Cut the eggplant into ½ inch thick rounds.
Step 2
In a small bowl, whisk together olive oil, balsamic dressing, garlic powder, salt, and pepper.
Step 3
Brush the mixture evenly on both sides of the eggplant slices. Let them marinate for 10–15 minutes.
Step 4
Preheat the grill or grill pan over medium heat.
Step 5
Grill eggplant slices for 3–4 minutes per side until tender and grill marks appear.
Step 6
Plate warm with a drizzle of extra balsamic (optional). Serve and enjoy!
