Buffalo Chicken Stuffed Pickles
Crisp dill pickles filled with spicy buffalo chicken for a bold, crave-worthy, low-carb main with big flavor.

Ingredients
- 6 Large Dill Pickles, hollowed lengthwise
- 8 oz. Cooked Chicken Breast, shredded
- 2 tbsp. Sugar-free Buffalo Sauce
- 1 tbsp. Approved Mayonnaise
- 1 Stalk Celery, finely chopped (Optional)
- 2 tsp. Green Onion, chopped (Optional)
- Salt and Pepper, to taste

Preparation
Step 1
Pat the hollowed pickles dry with paper towels and set aside.
Step 2
In a bowl, combine shredded chicken, buffalo sauce, mayonnaise, celery (if using), and green onion (if using).
Step 3
Season with salt and pepper to taste. Mix until well combined.
Step 4
Spoon the buffalo chicken mixture evenly into each pickle half.
Step 5
Serve immediately or chill for 10–15 minutes before serving for best flavor.
