Cajun Egg Salad

A zesty Cajun Egg Salad, featuring hard-boiled eggs tossed in a spicy Cajun mayo dressing with a hint of heat.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 4 hard-boiled eggs, chopped
  • 2 tsp mayonnaise
  • 2 tsp Dijon mustard
  • Dash of cayenne pepper (to taste)
  • Dash of onion powder
  • Dash of smoked paprika
  • Black pepper, to taste
  • Salt, to taste
  • Dash of dried thyme
  • 2 scallions, thinly sliced
  • Optional add-ins: relish, celery, pickles, or hot sauce

Preparation

Step 1 

Peel and chop the hard-boiled eggs into small pieces. Place them in a mixing bowl.

Step 2

Add the mayonnaise and Dijon mustard to the eggs. Stir until well combined.

Step 3

Sprinkle in cayenne pepper, onion powder, smoked paprika, black pepper, salt, and dried thyme. Adjust seasonings to taste and mix well.

Step 4

Stir in the thinly sliced scallions for a burst of freshness.

Step 5

If desired, mix in relish, chopped celery, pickles, or a splash of hot sauce for added flavor and texture.

Step 6

Enjoy the Cajun egg salad on its own, in a lettuce wrap, or as a sandwich filling.
