Cauliflower Hash Brown

Ingredients

  • 2 cups Cauliflower Florets
  • ½ Onion, chopped
  • 1 Scallion, finely sliced
  • 1 Egg
  • 1 Packet Ideal Protein Chips
  • Garlic Powder, to taste
  • Onion Powder, to taste
  • Salt & Pepper, to taste
  • 2 tbsp. Olive Oil

Preparation

Step 1

Add cauliflower florets to a food processor and pulse until they resemble coarse rice.

Step 2

Transfer to a microwave-safe bowl and microwave for 2–3 minutes to soften slightly. Let it cool.

Step 3

In a large bowl, crush the IP chips finely and combine with the cauliflower, chopped onion, scallion, egg, garlic powder, onion powder, salt, and pepper. Mix until fully combined.

Step 4

Shape the mixture into small hash brown patties using your hands.

Step 5

Heat olive oil in a non-stick skillet over medium heat.

Step 6

Place the patties in the skillet and cook for 3–4 minutes per side or until golden brown and crispy.

Step 7

Remove and place on a paper towel to drain excess oil.

Step 8

Serve warm, optionally with an IP-approved dipping sauce.
