
Chicken Salad Stuffed Cucumbers
Crisp cucumbers loaded with a creamy, zesty chicken salad for the perfect quick lunch or snack.

- 4 Pickling Cucumbers
- 16 oz. Cooked Chicken Breast
- ⅓ cup Approved Mayonnaise
- ¼ cup Chopped Celery
- 1 tsp. Lemon Juice
- 2 tbsp. Chopped Green Onions
- ½ tsp. Garlic Powder
- To taste Salt and Pepper

Preparation
Step 1
Cut each cucumber in half lengthwise.
Step 2
Use a spoon to scoop out the seeds, creating a hollow center for stuffing.
Step 3
In a bowl, combine the cooked chicken, mayonnaise, chopped celery, lemon juice, green onions, garlic powder, salt, and pepper.

Mix well until all ingredients are evenly coated.

Spoon the chicken salad mixture into the hollowed-out cucumbers.

Press gently to ensure the filling stays in place.
