Chicken Salad Stuffed Tomatoes

A juicy twist on classic chicken salad — served right inside fresh, ripe tomatoes!

Ingredients

  • 3 cups Cooked & Shredded Chicken
  • 1 cup Celery, Chopped
  • ¼ cup Green Onion, Chopped
  • ¼ cup Approved Mayonnaise
  • 1 tbsp. Lemon Juice
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • ½ tsp. Onion Powder
  • ¼ tsp. Garlic Powder
  • 6 Large Ripe Tomatoes

Preparation

Step 1

Slice the tops off the tomatoes and carefully scoop out the seeds and pulp to create hollow shells. Set aside.

Step 2

In a large bowl, mix the shredded chicken, celery, green onion, mayonnaise, lemon juice, salt, pepper, onion powder, and garlic powder until well combined.

Step 3

Spoon the chicken salad into each tomato shell, packing it in gently.

Step 4

Chill for 15–30 minutes or serve immediately.
