Chili Lime Cauliflower

Roasted cauliflower with a smoky, spicy kick, finished with fresh lime for a zesty, addictive bite!

Ingredients

  • 4 Cups Cauliflower, (Cut into small florets)
  • 1 tbsp. Oil
  • ¼ tsp. Fine Sea Salt
  • 1 tsp. Ancho Chili Powder
  • 1 tsp. Smoked Paprika
  • ½ tsp. Onion Powder
  • ½ tsp. Garlic Powder
  • ⅛ to ¼ tsp. Cayenne Pepper (adjust for spice level)
  • 1 Green Onion, Finely Sliced
  • 2 Lime Wedges

Preparation

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a bowl, toss cauliflower florets with oil, salt, chili powder, paprika, onion powder, garlic powder, and cayenne pepper.

Step 3

Spread the seasoned cauliflower on a baking sheet in a single layer.

Step 4

Roast for 20-25 minutes, stirring halfway, until tender and slightly crispy.

Step 5

Sprinkle with sliced green onions and squeeze fresh lime juice over the top.

Step 6
