Cilantro Lime Shrimp with Zucchini Noodles

Tender shrimp and zucchini noodles tossed in a zesty cilantro‑lime sauce for a light, vibrant, flavor‑packed dish.

Ingredients

  • 1 lb Shrimp, shelled and deveined
  • 1½ tbsp. Olive Oil
  • 4 Garlic cloves, minced
  • 1 Pinch Red Pepper Flakes (optional)
  • ¼ Cup Vegetable Broth
  • Juice of 1½ Limes
  • 3 medium Zucchini, spiralized or cut into noodles
  • Salt and Freshly Cracked Pepper, to taste
  • 1 tsp. Lime Zest
  • 2 tbsp. Fresh Cilantro, chopped

Preparation

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

Step 3

Add shrimp and cook 2–3 minutes per side until pink and cooked through.

Step 4

Pour in vegetable broth and lime juice. Stir and simmer for 1–2 minutes.

Step 5

Add zucchini noodles and toss gently. Cook for 2–3 minutes until just tender.

Step 6

Season with salt and black pepper. Stir in lime zest and chopped cilantro.

Step 7

Serve immediately while warm.
