
Cod and Veggie Foil Packets
Light, flavorful, and mess-free — these foil packets lock in all the citrusy, herb-infused goodness of perfectly baked cod and garden veggies.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 cup Zucchini, Thinly Sliced
- 1 cup Cherry Tomatoes, Halved
- 1 cup Green Beans (Cut into 1-inch pieces)
- ½ tbsp. Extra Virgin Olive Oil, Divided
- 1 tbsp. Chopped Fresh Oregano
- 1 tbsp. Fresh Thyme Leaves
- 2 Cod Fillets
- Salt, to taste
- Freshly Ground Black Pepper, to taste
- ½ Lemon, Juiced
- Oil Spray

Preparation
Step 1
Preheat oven to 400°F (200°C).
Step 2
Tear two large sheets of aluminum foil and spray lightly with oil spray.
Step 3
In a bowl, toss zucchini, cherry tomatoes, and green beans with half of the olive oil, oregano, thyme, salt, and pepper.
Step 4
Divide the veggies evenly between the two foil sheets.
Step 5
Place one cod fillet on top of each veggie pile.
Step 6
Drizzle with remaining olive oil, a squeeze of lemon juice, and season with salt and pepper.
Step 7
Fold foil over the fish and vegetables to form sealed packets.
Step 8
Place the packets on a baking sheet and bake for 20–25 minutes, or until the cod is opaque and flakes easily.
Step 9
Carefully open packets and serve hot. Enjoy!
