
Greek Chicken and Cauliflower Bake
A savory one-pan dish featuring tender chicken and roasted cauliflower seasoned with Greek spices and zesty lemon for a delicious, Mediterranean-inspired meal.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 lb. Chicken Breast
- 4 cups Cauliflower
- 2 tbsp. Greek Seasoning
- 1 Lemon
- 1 tbsp. Olive Oil

Preparation
Step 1
Roughly chop the chicken breast and cauliflower into about 1-inch pieces.
Step 2
Combine chicken breast and cauliflower with Greek seasoning, lemon juice, and 1/2 tbsp olive oil. Mix well. Let it marinate for at least 10 minutes.
Step 3
Heat a large skillet over medium-high heat with the remaining olive oil. Once the oil is hot, add the chicken and veggies to the skillet and let them cook on the first side for 3-4 minutes without turning. Then cook for an additional 3-5 minutes, stirring once or twice, until the chicken is cooked through (165˚F internal temp).
