Ground Chicken and Cabbage Bowl

Ingredients

  • 3 cups Green Cabbage, Shredded
  • 8 oz. Ground Chicken
  • 2 tbsp. Shallot, Diced
  • ½ tbsp. Olive Oil
  • ½ cup Red Bell Pepper, Grated
  • 1 tsp. Sweet Paprika
  • 4 tsp. Tomato Paste
  • ¾ cup Chicken Broth
  • Salt, to taste
  • Black Pepper, to taste
  • Chopped Parsley (for Garnish)
  • 1 cup Cauliflower Rice, Cooked

Preparation

Step 1

Heat olive oil in a skillet over medium heat.

Step 2

Sauté the diced shallots until translucent.

Step 3

Add ground chicken and cook until browned.

Step 4

Stir in paprika, tomato paste, and grated red bell pepper.

Step 5

Pour in chicken broth and bring to a light simmer.

Step 6

Add shredded cabbage, stir, and cook until tender and flavors meld (about 8–10 minutes).

Step 7

Season with salt and pepper to taste.

Step 8

Serve warm over cauliflower rice, garnished with chopped parsley.
