
Indian Spiced Spinach
Warm, flavorful, and full of aromatic spices, this Indian-inspired spinach dish adds a burst of color and taste to any meal.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- Drizzle of Oil
- 2 Shallots, diced
- 4 Garlic Cloves, minced
- 2 tsp. Fresh Ginger, minced
- 1 tsp. Cumin
- 1 tsp. Turmeric
- 2 tsp. Mustard Seeds
- 10 cups Fresh Spinach
- Salt and Pepper, to taste

Preparation
Step 1
Heat a large skillet or pan over medium heat, adding a drizzle of oil.
Step 2
Add diced shallots, minced garlic, and fresh ginger. Sauté for 2–3 minutes until fragrant.
Step 3
Stir in cumin, turmeric, and mustard seeds. Cook for another 1–2 minutes to release the spices’ flavors.
Step 4
Gradually add spinach to the pan, stirring until it wilts down. Add it in batches to allow for proper wilting.
Step 5
Season with salt and pepper to taste, then toss everything together.
Step 6
Serve warm as a delicious side dish!
