
Instant Pot Lemon Garlic Chicken
Tender chicken infused with lemon for a bright, wholesome meal.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 tbsp. Olive Oil
- 2 lb. Boneless, Skinless Chicken Breast
- To taste Salt and Pepper
- 3 Cloves Garlic, Minced
- ½ tsp. Dried Thyme
- 1 Large Lemon Juiced (About 3 tbsp.)
- 1 cup Low-sodium Chicken Stock
- 3 cups Fresh Kale, (Stems removed and roughly chopped)

Preparation
Step 1
Set the Instant Pot to sauté mode. Add olive oil.
Step 2
Season chicken breasts with salt and pepper.
Step 3
Sear them in the pot for 2–3 minutes per side until lightly browned. Remove and set aside.
Step 4
Add minced garlic to the pot and sauté for 30 seconds until fragrant.
Step 5
Pour in chicken stock, lemon juice, and dried thyme. Stir well and return chicken to the pot.
Step 6
Cancel sauté mode. Secure the lid and set to Pressure Cook (High) for 10 minutes.
Step 7
Once the cycle is complete, allow a natural release for 5 minutes, then perform a quick release.
Step 8
Carefully open the lid and stir in the chopped kale. Let it wilt in the hot liquid for 2–3 minutes.
Step 9
Serve warm with extra lemon wedges if desired.
