
Italian Cauliflower Salad
Fresh, zesty, and full of bold Mediterranean flavors, this cauliflower salad is a light yet satisfying side.

Ingredients
- 6 cups Cauliflower Florets
- 1½ tbsp. Olive Oil
- 2 Garlic Cloves, minced
- ¼ cup Chopped Flat-leaf Parsley
- 3 tbsp. Capers
- 1½ tbsp. Fresh Lemon Juice
- ¼ tsp. Red Pepper Flakes
- Salt and Pepper, to taste

Preparation
Step 1
Steam or blanch cauliflower florets until just tender, about 4–5 minutes. Drain well.
Step 2
In a large skillet, heat olive oil over medium heat.
Step 3
Add garlic and cook for 30 seconds until fragrant.
Step 4
Add cauliflower to skillet, tossing gently to coat in garlic oil.
Step 5
Stir in parsley, capers, lemon juice, and red pepper flakes.
Step 6
Season with salt and pepper, toss again, and enjoy.
