Mediterranean Cucumber Salad
Crisp cucumbers tossed with tomatoes, herbs, and lemon create a light, refreshing Mediterranean-inspired side.

Ingredients
- 2 (about 3 cups) English Cucumbers, sliced into quarters
- 3 (about 3 cups) Medium Tomatoes, diced
- 1 (¾ cup) Red Onion, finely diced
- 1 cup Fresh Parsley, loosely packed and finely chopped
- 2 tbsp. Extra-virgin Olive Oil
- 2 tsp. Freshly Squeezed Lemon Juice
- Salt, to taste

Preparation
Step 1
Add cucumbers, tomatoes, red onion, and parsley to a large mixing bowl.
Step 2
In a small bowl, whisk together olive oil, lemon juice, and salt.
Step 3
Pour the dressing over the vegetables and toss gently to combine.
Step 4
Taste and adjust seasoning if needed.
Step 5
Serve immediately or chill for 10–15 minutes before serving. Enjoy!
