Shallot and Garlic Dressing

A zesty and aromatic dressing made with fresh shallots, garlic, lemon, and Dijon mustard — perfect for salads, roasted veggies, or as a light marinade.

Allowed for Ideal Protein phases 1 to 3.

  • 1 Large Shallot, peeled and finely minced
  • 1 Garlic Clove, peeled and finely minced
  • ⅓ cup Extra Virgin Olive Oil
  • 1 Lemon, Zested and Juiced
  • 1 tsp. Dijon Mustard
  • ¼ tsp. Fine Sea Salt
  • ¼ tsp. Freshly Cracked Black Pepper

Preparation

Step 1

In a small bowl or jar, whisk together shallot, garlic, lemon juice, lemon zest, dijon mustard, salt, and pepper.

Step 2

Slowly drizzle in olive oil while whisking until the dressing emulsifies.

Step 3

Use immediately as a dressing for salads and roasted vegetables.
