
Spicy Spinach Sauce
A bold and herbaceous green sauce with fresh spinach — perfect for drizzling over proteins or veggies.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 100g Baby Spinach, Washed
- 1 Garlic Clove
- ½ Shallot, Diced
- 30g Fresh Coriander, Roughly Chopped
- 15g Fresh Mint, Leaves Picked
- 2 Green Chillies, Chopped (De-seeded if preferred)
- 1 Cardamom Pod, Seeds Removed and Crushed
- 1 tsp. Ground Cumin
- 100 ml. Extra-virgin Olive Oil
- 1 tbsp. Apple Cider Vinegar

Preparation
Step 1
Add spinach, garlic, shallot, coriander, mint, chillies, crushed cardamom seeds, and cumin to a blender or food processor.
Step 2
Pulse a few times to break everything down.
Step 3
Add olive oil and apple cider vinegar, then blend until smooth and vibrant.
Step 4
Taste and adjust seasoning if needed.
Step 5
Serve fresh or refrigerate for up to 3 days.
Step 6
Serve warm with your favorite dipping sauce. Enjoy!
