
Steak With Scallion and Herb Sauce
Perfectly seared steak topped with a bright, herby scallion sauce that adds freshness and zing to every juicy bite.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 2 New York Strip Steaks (10 oz. each)
- 2 tbsp. Kosher Salt
- 5 tbsp. Whole Peppercorns, Coarsely Crushed (Reserve ½ tsp for sauce)
- 10 Scallions/Green Onions, Chopped into ½” pieces
- 1 tbsp. Fresh Garlic, Minced
- ¼ cup Fresh Parsley, Chopped
- ¼ cup Fresh Cilantro, Chopped
- 1 Lemon, Juice
- ½ tsp. Peppercorn, Crushed (From above)
- ½ cup Chives, Chopped (For garnish)

Preparation
Step 1
Rub the steaks evenly with kosher salt and 4½ tbsp of the crushed peppercorns.
Step 2
Let them rest at room temperature for 20–30 minutes.
Step 3
Heat a skillet or grill over medium-high heat.
Step 4
Cook the steaks for 3–4 minutes per side, or until they reach your desired doneness.
Step 5
Remove from heat and let them rest for 5–10 minutes.
Step 6
In a small bowl, combine the chopped scallions, garlic, parsley, cilantro, lemon juice, and the reserved ½ tsp crushed peppercorns. Stir well.
Step 7
Slice the steaks and spoon the scallion herb sauce on top. Garnish with chopped chives and serve warm.
