
Summer Steak Salad
Refreshing, zesty, and protein-packed — this steak salad is perfect for a light meal.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 2 cups Cucumber, Sliced
- 4 oz. Steak (grilled or pan-seared)
- 1 cup Arugula
- 1 cup Mixed Greens
- 2 tsp. Olive Oil
- ¼ cup Lemon Juice
- 1 oz. Feta Cheese (Maintenance Only)
- Salt and Pepper, to taste

Preparation
Step 1
Season steak with salt and pepper.
Step 2
Grill or pan-sear steak to your desired doneness (about 4-5 minutes per side for medium). Let rest before slicing into strips.
Step 3
Slice cucumber into thin rounds. In a large bowl, combine arugula, mixed greens, and cucumber.

Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.

Toss the salad with the dressing, ensuring everything is evenly coated.

Add sliced steak on top and sprinkle with feta cheese (if in maintenance).
