Zucchini Noodles With Lemon Parsley Tuna

A light and quick zucchini noodle dish with tuna, capers, and fresh parsley.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • ½ tbsp. Extra Virgin Olive Oil
  • 1 Garlic Clove, Minced
  • 1 Pinch Red Pepper Flakes
  • 4 cups Zucchini, Spiralized
  • 2 tbsp. Freshly Chopped Parsley
  • ½ Lemon (Juice and Zest)
  • 2 Can Tuna in Water, Drained
  • ¼ cup Capers

Preparation

Step 1

Heat the olive oil in a pan over medium heat.

Step 2

Add the minced garlic and red pepper flakes. Cook for about 1 minute, stirring, until fragrant.

Step 3

Add the spiralized zucchini to the pan. Sauté for 2-3 minutes until slightly tender but still firm.

Step 4

Stir in the parsley, lemon juice, and lemon zest. Mix everything together well.

Step 5

Add the drained tuna and capers. Gently toss to combine and warm through.

Step 6

Season with a little salt and pepper, if desired.

Step 7

Serve immediately and enjoy this healthy, flavorful meal!
