Baked Tofu and Mushroom Marinara

Hearty tofu and savory mushrooms baked in a rich marinara sauce, bursting with Italian flavors.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 pkt. (16 oz) Organic Firm or Extra Firm Tofu
  • ½ lb. Organic Baby Bella Mushrooms (or any mushrooms on hand), Sliced
  • 4 Garlic Cloves, Crushed
  • 1½ cup Marinara Sauce
  • ¼ tsp. Chili Flakes
  • ¼ tsp. Salt
  • ¼ tsp. Ground Black Pepper
  • 1 tsp. Dried Oregano
  • 1 tbsp. Olive Oil
  • Fresh Basil
  • 1 cup Cheese, Shredded (Maintenance Only)

Preparation

Step 1

Set your oven to 375°F (190°C).

Step 2

Drain and press the tofu to remove excess moisture, then cut it into slices.

Step 3

Heat olive oil in a pan over medium heat. Add mushrooms and crushed garlic, sautéing for about 5 minutes until softened.

Step 4

Stir in the chili flakes, salt, pepper, and dried oregano. Pour in the marinara sauce and mix well.

Step 5

Spread half of the marinara mixture evenly in a baking dish.

Step 6

Arrange the tofu on top, then pour the remaining sauce over it. If using cheese, sprinkle it over the dish.

Step 7

Place the dish in the oven and bake for 25-30 minutes until the sauce is bubbling and the top is golden.

Step 8

Remove from the oven, garnish with fresh basil, and serve warm.
