Bruschetta
A light, low-carb bruschetta made with fresh tomatoes, basil, and garlic over crunchy zucchini slices — simple, colorful, and full of flavor.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 Medium Zucchini, long and narrow preferred
- 1 cup Grape Tomatoes, chopped
- 2 Garlic Cloves, minced
- ¼ cup Fresh Basil Leaves, chopped
- ½ tbsp. Extra-virgin Olive Oil
- 1 tsp. Ideal Protein Balsamic Vinegar
- ¼ tsp. Salt
- ⅛ tsp. Freshly Ground Black Pepper

Preparation
Step 1
Slice the zucchini lengthwise into thin strips or cut into round slices to use as the “base.”
Step 2
In a bowl, combine chopped tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Mix well.
Step 3
Spoon the tomato mixture onto each zucchini slice.
Step 4
Serve immediately or chill for 10–15 minutes to let flavors blend.
