Dijon Mustard Mushrooms

Savory sautéed mushrooms in a tangy Dijon and parsley sauce.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 4 cups Crimini Mushrooms, Cleaned and Halved
  • 3 Garlic Cloves, Minced
  • 1 Shallot, Minced
  • 1 tbsp. Oil
  • 2 tsp. Lemon Juice
  • ¼ cup Chopped Flat-leaf Parsley
  • 1 tbsp. Dijon Mustard
  • To taste Salt and Pepper

Preparation

Step 1

Heat the oil in a large skillet over medium heat.

Step 2

Add the minced garlic and shallot to the skillet, cooking until fragrant and softened, about 1-2 minutes.

Step 3

Add the mushrooms and cook, stirring occasionally, until they release their moisture and start to brown, about 6-8 minutes.

Step 4

Stir in the Dijon mustard and lemon juice, making sure the mushrooms are evenly coated.

Step 5

Season with salt and pepper to taste.

Step 6

Remove from heat and sprinkle with chopped parsley.

Step 7

Serve warm as a delicious side dish. Enjoy!
