Grilled Summer Squash with Basil Vinaigrette

Ingredients

  • 6 cups Yellow Summer Squash (Cut lengthwise)
  • 1 tbsp. Olive Oil
  • 1 tsp. Kosher Salt
  • ⅓ cup Basil Vinaigrette
  • Ground Black Pepper, to taste

Preparation

Step 1

Preheat grill or grill pan to medium-high heat.

Step 2

In a large bowl, toss squash with olive oil, salt, and pepper.

Step 3

Place on grill and cook for 2–3 minutes per side until grill marks appear and squash is tender.

Step 4

Remove from heat and drizzle with basil vinaigrette while warm.

Step 5

Serve warm and enjoy!
