Ground Beef Veggie Bowl

Seasoned ground beef, colorful veggies, and tender spiralized squash come together for a flavorful, protein-packed meal.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 lb. Lean Ground Beef
  • 2 Garlic Cloves, minced
  • 8 oz. Mushrooms, sliced
  • 1 Large Yellow Pepper, diced
  • 1 Large Red Pepper, diced
  • 1 (14.5 oz.) Can Fire-roasted Crushed Tomatoes
  • 1 tsp. Salt
  • ½ tsp. Freshly Ground Black Pepper
  • 2 (10 Oz.) Bags Frozen Spiralized Vegetables or Spaghetti Squash
  • Pinch of Red Pepper Flakes (more if desired)

Preparation

Step 1

Heat a large skillet over medium heat.

Step 2

Add ground beef and cook for 5–6 minutes, breaking it apart as it browns. Drain excess fat, if needed.

Step 3

Add garlic, mushrooms, and diced peppers. Sauté for 4–5 minutes, until the vegetables soften.

Step 4

Stir in crushed tomatoes, salt, pepper, and red pepper flakes. Simmer 5–7 minutes until the sauce thickens slightly.

Step 5

In a separate pan, heat the frozen spiralized vegetables or spaghetti squash according to package directions.

Step 6

Serve the beef and veggie mixture over the warm spiralized vegetables. Toss lightly to combine.
