
Herbed Tomato Zucchini Salad
A light, fresh salad packed with juicy tomatoes, crisp zucchini, and a burst of herb flavor — perfect for a refreshing side dish!

Ingredients
- 1 Pint Cherry Tomatoes (Red and Yellow), Halved
- 1 Large Zucchini, Unpeeled and Sliced Into Thin Rounds, Then Halved
- 1 Shallot, Sliced (or ⅓ Cup Chopped Red Onion)
- 3 tbsp. Lemon Juice, Divided
- ½ cup Mixed Fresh Herbs, Chopped (Chives, Italian Parsley, Basil)
- 1 tbsp. Extra Virgin Olive Oil
- 2 tsp. Sumac
- 1 tsp. Garlic Cloves, Minced
- To taste Sea Salt and Black Pepper

Preparation
Step 1
In a large mixing bowl, combine the halved cherry tomatoes, sliced zucchini, and sliced shallot (or chopped red onion).
Step 2
Add 2 tbsp. of the lemon juice and toss gently to coat the vegetables.
Step 3
In a small bowl, whisk together the remaining 1 tbsp. lemon juice, olive oil, sumac, and minced garlic.
Step 4
Pour the dressing over the vegetables and toss until evenly coated.
Step 5
Add the chopped fresh herbs and season with sea salt and black pepper to taste.
Step 6
Toss gently again and serve immediately. Enjoy
