Italian Spinach
Tender spinach sautéed with tomatoes and garlic for a light, fresh side inspired by classic Italian flavors.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- ½ tbsp. Olive Oil
- 3 Fresh Garlic Cloves, finely minced
- 2 Vine-ripe or Roma Tomatoes, cut into wedges
- 6 cups Baby Spinach
- Sea Salt and Freshly Cracked Black Pepper, to taste

Preparation
Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add minced garlic and sauté for 30–60 seconds until fragrant.
Step 3
Add tomato wedges and cook 2–3 minutes until slightly softened and juicy.
Step 4
Add baby spinach and toss gently. Cook 1–2 minutes until wilted.
Step 5
Season with sea salt and freshly cracked black pepper.
Step 6
Remove from heat and serve warm. Enjoy!
