- 1 1/2 cups of Jicama
- 1/4 cup Cucumber
- 1/4 cup Red Onion
- 1 Scallion (chopped)
- Salt to Taste
- 1 tbsp. Vinegar
- 1/4 tsp. Red Chili Paste
- 1 tbl sp Olive Oil
- 1 Packet Splenda
- Pepper to Taste
Preparation
Step 1
For the dressing, whisk the rice vinegar with olive oil, Splenda, red chili paste, and a pinch of salt & pepper.
Step 2
Cut all vegetables into thin strips.
Step 3
In a bowl, mix vegetables and pour dressing.
Step 4
Toss and mix well.
Step 5
Serve and top with scallion.
