
Lemony Hearts of Palm Salad

Ingredients
- ¼ cup Red Onion, thinly sliced
- 3 cups Hearts of Palm, sliced
- 1 cup Celery, sliced
- 2 tbsp. Fresh Parsley, chopped
- 3 tbsp. Lemon Juice
- 1 tbsp. Olive Oil
- Salt and Pepper, to taste
- 2 cups Arugula

Preparation
Step 1
Soak sliced red onion in cold water for 10 minutes to reduce sharpness. Drain and set aside.
Step 2
In a large bowl, combine hearts of palm, celery, parsley, and the drained red onion.
Step 3
Add lemon juice and olive oil, then toss well to coat.
Step 4
Season with salt and pepper to taste.
Step 5
Serve the salad over a bed of fresh arugula and enjoy!
