Mashed Zucchini

Light, creamy, and simple — a healthy alternative to mashed potatoes, seasoned perfectly with salt and pepper.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 2 Medium-size Zucchinis
  • Salt and Pepper, to taste

Preparation

Step 1

Wash zucchinis and cut into medium-sized chunks.

Step 2

In a pot, bring salted water to a boil.

Step 3

Add zucchini chunks and simmer over medium heat for about 20 minutes, until fork-tender.

Step 4

Drain the water completely.

Step 5

Using an immersion blender (or potato masher), blend the zucchini until smooth and creamy.

Step 6

Taste and adjust with additional salt and pepper, as needed.

Step 7

Serve warm as a light and wholesome side dish.
