Scallops and Mushrooms

A light yet flavorful protein-packed dish, combining tender scallops with savory mushrooms and fresh herbs.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 lb. Scallops
  • 8 oz. Mushrooms, Sliced
  • ¼ cup Olive Oil
  • 4 Tbsp. Fresh Parsley, Minced
  • 2 Garlic Cloves, Minced
  • 1 tsp. Lemon Pepper Seasoning

Preparation

Step 1

Clean the scallops and pat dry with paper towels.

Step 2

In a large skillet over medium heat, add half the olive oil.

Step 3

Sauté mushrooms for 4–5 minutes until tender. Remove and set aside.

Step 4

In the same skillet, add remaining olive oil and heat on medium-high.

Step 5

Add scallops in a single layer. Cook 2–3 minutes per side until golden and opaque.

Step 6

Return mushrooms to the skillet with scallops.

Step 7

Stir in minced garlic, parsley, and lemon pepper seasoning. Cook for another 1–2 minutes until fragrant.

Step 8

Garnish with additional parsley if desired. Enjoy!
