Shrimp Zoodles

Light, zesty, and full of flavor — tender shrimp tossed with lemony zucchini noodles for a refreshing, guilt-free twist on pasta night.

Allowed for Ideal Protein phases 1 to 3.

Ingredients

  • 1 lb. Shrimp, raw, peeled & deveined
  • 1 tbsp. Oil
  • 1 Garlic Clove, Crushed
  • ½ Lemon, Juice Only
  • 16 Cherry Tomatoes
  • 2 lbs. Zucchini Noodles
  • Sea Salt and Black Pepper, to taste
  • Fresh Basil, Optional

Preparation

Step 1

Pat the shrimp dry with a paper towel and season lightly with salt and black pepper.

Step 2

Heat oil in a large skillet over medium heat.

Step 3

Add the crushed garlic and sauté for 30 seconds until fragrant.

Step 4

Add shrimp to the skillet and cook for 2–3 minutes per side, until pink and opaque. Remove shrimp and set aside.

Step 5

In the same skillet, add cherry tomatoes and cook until softened, about 3–4 minutes.

Step 6

Add zucchini noodles (zoodles) and toss gently for 1–2 minutes until just tender but not soggy.

Step 7

Squeeze fresh lemon juice over the mixture, then add cooked shrimp back to the pan. Toss everything together.

Step 8

Garnish with fresh basil before serving. Enjoy
