- 1 lb. ground beef
- 2 eggs – slightly beaten
- 1 tsp. oregano
- 1 tbsp. onion powder
- 1 tsp. rosemary
- 1 tsp. garlic
- 2 cups shredded zucchini
- Salt and pepper to taste
Preheat oven to 350°F.
Place zucchini in a microwave-safe dish and cook for 1 minute on high.
Transfer to a cheesecloth and squeeze out excess moisture.
Combine all ingredients well and make them into meatballs.
Place meatballs on a baking sheet and bake for 30-40 minutes until medium-well to well done.
Drain on paper towels.
