Spiced Pork Tenderloin
Pan-searing locks in juices and builds a rich crust, while finishing in the oven keeps the pork tender and evenly cooked.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 2 lb. Pork Tenderloin
- 3 tbsp. Dijon Mustard
- 2 tsp. Salt
- 1½ tsp. Ground Coffee
- 1 tsp. Cumin
- 1 tbsp. Smoked Paprika
- 1 tsp. Black Pepper
- ½ tsp. Mustard Powder
- 1 tbsp. Italian Seasoning
- ½ tsp. Garlic Powder
- 1 tsp. Onion Powder

Preparation
Step 1
Preheat oven to 400°F (204°C). Line a baking sheet or lightly grease a roasting pan.
Step 2
In a small bowl, mix Dijon mustard, salt, ground coffee, cumin, smoked paprika, black pepper, mustard powder, Italian seasoning, garlic powder, and onion powder to form a thick spice paste.
Step 3
Pat the pork tenderloin dry and rub the spice mixture evenly over all sides.
Step 4
Place the pork on the prepared pan and roast for 20–25 minutes
Step 5
Remove from oven and let rest for 5 minutes before slicing.
Step 6
Slice into medallions and serve warm. Enjoy!
