Sun Dried Tomato Chicken Salad
Tender chicken tossed with sun-dried tomatoes, fresh greens, and a vibrant lemon dressing for a light yet satisfying salad.
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 4 cups Rotisserie Chicken, chopped or shredded (or cooked chicken of choice)
- ¼ cup Sun-dried Tomatoes, chopped
- ¼ cup Red Onion, chopped
- 1 cup Baby Spinach, chopped
- 1½ tbsp. Extra-virgin Olive Oil
- ¼ cup Fresh Lemon Juice (from 1 large or 2 small lemons)
- ½ tsp. Garlic Powder
- ¼ tsp. Salt (more to taste)
- ¼ tsp. Black Pepper (more to taste)

Preparation
Step 1
In a large bowl, add chopped or shredded chicken.
Step 2
Add sun-dried tomatoes, red onion, and chopped spinach. Toss gently to combine.
Step 3
In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper.
Step 4
Pour the dressing over the chicken mixture and toss until evenly coated.
Step 5
Taste and adjust seasoning if needed.
Step 6
Serve immediately or chill for 15–20 minutes before serving for best flavor.
