Thai Chicken Lettuce Wraps

Fresh, crunchy, and bursting with Thai-inspired flavor — these chicken lettuce wraps pair juicy chicken with crisp veggies and a creamy peanut sauce for a light yet satisfying meal.

Ingredients

  • 16 oz. Grilled or Rotisserie Chicken
  • 1 cup English Cucumber, seeded and diced
  • 1 cup Red Peppers, grated
  • ½ cup Tomatoes, diced
  • 1 Bunch Fresh Cilantro, chopped
  • 3 Green Onions, sliced
  • ⅓ cup Pb2 or Pbfit (Powdered peanut butter)
  • 2 tbsp. Unsweetened Almond Milk (or milk of choice)
  • 1 tbsp. Fresh Lime Juice
  • 1 Garlic Clove, crushed
  • 1 tsp. Vinegar
  • 1 tsp. Low-sodium Soy Sauce
  • 1 tsp. Sesame Oil
  • ½ tsp. Grated Fresh Ginger
  • 1 Head Butter Lettuce

Preparation

Step 1

Shred or cut the cooked chicken into small bite-sized pieces.

Step 2

In a large bowl, combine chicken, cucumber, red pepper, tomatoes, cilantro, and green onions. Toss gently to mix.

Step 3

In a small bowl, whisk together PB2, almond milk, lime juice, garlic, vinegar, soy sauce, sesame oil, and ginger until smooth and creamy.

Step 4

Add a splash more milk if needed to thin the sauce.

Step 5

Drizzle peanut sauce over the chicken mixture or serve it on the side for dipping.

Step 6

Spoon the chicken mixture into lettuce leaves, wrap, and enjoy immediately.
