
Tofu Scallion Stir Fry
Allowed for Ideal Protein phases 1 to 3.

Ingredients
- 1 Block (14 oz) Firm Tofu, Pressed and Cubed
- 1 tbsp. Olive Oil
- 1 Ginger Root, Fresh and Sliced (for Seasoning Oil)
- 3 Fresh Garlic Cloves (for Seasoning Oil)
- 1 Bunch Green Onions, Sliced
- ¼ cup Vegetable Stock
- 1 tbsp. Minced Garlic
- 1 tbsp. Minced Ginger
- 2 tbsp. Soy Sauce (or Coconut Aminos)
- To taste Salt and Pepper

Preparation
Step 1
Press the tofu to remove excess moisture and cut it into small cubes.
Step 2
Heat the olive oil in a skillet over medium heat.
Step 3
Add fresh ginger slices and garlic cloves to the oil. Sauté for 1-2 minutes.
Step 4
Add the tofu cubes to the skillet and cook until golden brown on all sides, about 6-8 minutes.
Step 5
Add the sliced green onions to the skillet. Stir-fry for 2-3 minutes until fragrant.
Step 6
Pour in the vegetable stock and soy sauce. Stir and cook for another 2-3 minutes until the sauce reduces slightly.
Step 7
Season with salt and pepper to taste.
Step 8
Serve hot, garnished with extra green onions if desired. Enjoy!
