  • 2 lbs. Juicy, Ripe Tomatoes (about 4), Chopped
  • 1 Small Cucumber, Diced
  • 2 Tender Inner Celery Stalks With Leaves, Sliced
  • ¼ Red Onion, Thinly Sliced
  • ¼ cup Olive Oil
  • To taste Salt
  • 1 tsp. Dry Oregano
  • 4 Fresh Basil Leaves, Torn

Preparation

Step 1

In a large bowl, combine bite-sized chopped tomatoes, sliced cucumber, and chopped celery.

Step 2

Add thinly sliced red onion for a hint of sweetness.

Step 3

Drizzle olive oil evenly over the vegetables.
