Crab-Stuffed Cucumber Cups
Crab-Stuffed Cucumber Cups are refreshing and elegant appetizers made with crisp cucumber cups filled with a delectable crab salad. A delightful and light seafood treat.

- 1 Long English Cucumber
- 1 cup Crab Meat or Well-drained Canned
- ΒΌ cup Red Bell Pepper, Finely Chopped
- 2 tsp. Jalapeno Pepper, Finely Minced
- 2 tsp. Cilantro, Finely Chopped (For Garnish)
- 1 tbsp. Approved Mayonnaise
- Sea Salt and Pepper To Taste
Preparation
Step 1
Start by preparing the cucumber. Wash it thoroughly and trim off the ends. Cut the cucumber into 2-inch thick slices.
Step 2
Using a small spoon or melon baller, gently scoop out the seeds and some flesh from the center of each cucumber slice, creating a hollow cup-like shape. Make sure not to scoop all the way to the bottom.
Step 3
In a mixing bowl, combine the crab meat, red bell pepper, jalapeno pepper, approved mayonnaise, sea salt, and pepper. Mix well until all the ingredients are evenly combined.
Step 4
Spoon the crab mixture into the hollowed cucumber cups, filling them generously.
Step 5
Garnish with freshly chopped cilantro.
Step 6
Arrange the stuffed cucumber cups on a serving platter.
