Garlicky Lemon Kale

Bright, garlicky, and full of flavor — this lemon kale side dish brings a zesty twist to healthy greens.

Ingredients

  • 8 cups Kale
  • 1 tbsp. Olive Oil
  • 3 Garlic Cloves, peeled and sliced
  • Pinch Red Pepper Flakes
  • ½ cup Chicken Broth, Veggie Broth, or Water
  • ¼ tsp. Fine Sea Salt
  • ½ Lemon

Preparation

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add garlic slices and red pepper flakes. Sauté for about 30 seconds, until fragrant.

Step 3

Add kale and toss to coat in the oil and garlic.

Step 4

Pour in broth (or water) and cover the skillet. Let the kale steam for 3–5 minutes, until tender but still bright green.

Step 5

Uncover and season with salt. Squeeze fresh lemon juice over the top.

Step 6

Toss well and serve warm.
