Healthy Chicken Fajita and Cauliflower Rice
Healthy Chicken Fajita and Cauliflower Rice is a delicious and well-balanced dish that is perfect for a quick and easy dinner. - 1 lb Chicken breasts
- 2 tsp. Lemon Juice
- 1 Red Bell Pepper, Sliced
- 1 Yellow Bell Pepper, Sliced
- 1 Green Bell Pepper, Sliced
- 1 tbsp. Olive Oil
- 2 Garlic Cloves, Crushed
- 2 cups Brussel Sprouts, Fresh or Frozen
- 2 tsp. Chili Powder
- 1 tsp. Paprika
- ½ tsp. Cumin Powder
- Salt and Black Pepper to taste
Preparation
Step 1
Preheat the oven to 400°F (200°C).
Step 2
Cut chicken breasts into thin strips. Then, In a large bowl season the chicken with salt, black pepper, chili powder, paprika, and cumin powder.
Step 3
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side or until browned. Remove from the skillet and set aside.
Step 4
In the same skillet, add the sliced peppers. Sauté until they are slightly softened, about 5-7 minutes.
Step 5
Add garlic and Brussels sprouts to the skillet. Cook for another 5-7 minutes or until the vegetables are tender.
Step 6
Return the chicken to the skillet and toss everything together. Drizzle lemon juice over the top.
Step 7
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through.
