Quick Tomato Vinaigrette
Looking for a quick way to spice up your meal? This easy, savory Tomato Vinaigrette is just what you need.
The tangy, spicy vinaigrette will add awesome flavor to your meal and make it more palatable. Allowed for all Ideal Protein phases.
- 1 small or ½ medium tomato (4 ounces), about ½ cup roughly chopped
- ½ cup extra virgin olive oil
- 1 tbsp. white wine vinegar
- 1 tbsp. Dijon mustard
- ¼ to ½ tsp. kosher salt
Roughly chop the tomato, remove the white cores but keeping the seeds. Add to a blender with the olive oil, white wine vinegar, Dijon mustard, and ¼ teaspoon of the kosher salt.
Blend mix until creamy. Taste and add another ¼ teaspoon kosher salt if necessary.
Store in refrigerator for up to 1 week.
