Spicy Salmon Cucumber Boats

Refreshing and flavorful, these spicy salmon cucumber boats are a quick and easy appetizer or light meal.

Allowed for Ideal Protein phases 1 to 3.

  •  6 oz. Smoked Salmon
  • 1 tbsp. Approved mayonnaise
  • 1 tbsp. minced cilantro
  • 1tsp. Sriracha
  • 3 small Persian cucumbers
  • To Taste Salt and pepper
  • 2 tbsp. Sesame seeds

Preparation

Step 1

Begin by slicing the cucumber in half lengthwise. Using a spoon, scoop out the seeds and flesh from the center of each half to create a hollow boat.

Step 2

Cut the salmon into small pieces and season with salt and pepper.

Step 3

In a small bowl, whisk together the mayonnaise, sriracha sauce, sesame seed, salt, and pepper until well combined.

Step 4

Add the salmon pieces to the bowl and toss with the spicy mayonnaise until evenly coated.

Step 5

Stuff the salmon mixture into the cucumber boats.

Step 6

Garnish with sliced cilantro, and sesame seeds, if desired.

Step 7
