Taco Lettuce Wraps
Taco Lettuce Wraps are a healthy and low-carb alternative to traditional tacos. Seasoned ground beef is wrapped in lettuce leaves and topped with fresh veggies for a light and flavorful meal.

- 8 Small Romaine Lettuce Leaves
- 1 Tsp. Oil
- 8 ounces Lean Ground Beef
- ¼ Tsp. Salt
- Prepared Salsa
- 1 Tbsp. White Vinegar
- 1 Tsp. Ground Cumin
- 1/2 Cup Avocado, Diced (for maintenance)
- 1/2 Cup Julienned Jicama
- ¼ Cup Finely Diced Red Onion
Preparation
Step 1
In a large skillet, heat the oil over medium-high heat.
Step 2
Add the lean ground beef to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
Step 3
Sprinkle the salt over the cooked beef and stir well to combine.
Step 4
Add the prepared salsa, white vinegar, and ground cumin to the skillet, and stir to combine with the beef.
Step 5
Reduce the heat to low and let the beef and salsa mixture simmer for 5-10 minutes until the flavors are fully incorporated.
Step 6
While the beef mixture is simmering, prepare the toppings by dicing the avocado, julienned the jicama, and finely dice the red onion.
Step 7
To assemble the lettuce wraps, take a large romaine lettuce leaf and spoon some of the beef and salsa mixture onto it.
Step 8
Top the beef with diced avocado, jicama, and red onion.
Step 9
Repeat with additional lettuce leaves and toppings as desired.
Step 10
