Ingredients

  • 1 Tortilla (8–10 Inches)
  • 2 Large Eggs
  • ¼ Cup Egg Whites
  • 2 oz. Lean Ham, Diced
  • ½ Cup Baby Spinach
  • 2 tbsps. Reduced-fat Shredded Cheddar or Swiss Cheese
  • 1 tbsp. Salsa
  • ¼ tsp. Garlic Powder
  • Salt and Black Pepper, to taste

Preparation

Step 1

Heat a nonstick skillet over medium heat.

Step 2

Add diced ham and cook for 1–2 minutes until warmed through.

Step 3

Add spinach and cook until lightly wilted.

Step 4

In a small bowl, whisk together eggs, egg whites, garlic powder, salt, and pepper.

Step 5

Pour the egg mixture into the skillet with the ham and spinach.

Step 6

Cook, stirring gently, until the eggs are fully set.

Step 7

Warm the tortilla briefly in a dry skillet or microwave to make it easier to roll.

Step 8

Place the egg mixture in the center of the tortilla.

Sprinkle with cheese and add salsa if desired.

Fold in the sides of the tortilla and roll tightly.
