Ingredients

  • 10 oz. Lean Ground Beef (93–96% Lean)
  • 2 Large Summer Squash
  • ½ Cup Mushrooms, finely chopped
  • ½ Cup Fresh Spinach, chopped
  • ¼ Cup Diced Tomato
  • 2 Cloves Garlic, minced
  • 1 tsp. Italian Seasoning
  • 1 tbsp. Grated Parmesan Cheese
  • ¼ Cup Reduced-fat Shredded Mozzarella
  • 1 tsp. Olive Oil
  • 1 tsp. Fresh Lemon Juice
  • Salt and Black Pepper, to taste

Preparation

Step 1

Preheat oven to 400°F.

Step 2

Slice summer squash in half lengthwise.

Step 3

Use a spoon to carefully scoop out the center of each zucchini half, leaving about ¼ inch of summer squash around the edges.

Step 4

Chop the scooped summer squash and set aside.

Step 5

Heat olive oil in a skillet over medium heat.

Add ground beef and cook until browned.
