Ingredients
- 5 oz. Shrimp, peeled and deveined
- ¾ Cup Baby Potatoes, halved
- 2 Cups Arugula
- ½ Cup Celery, sliced
- 2 tbsps. Red Onion, thinly sliced
- 1 tbsp. Fresh Dill, chopped
Lemon Vinaigrette
- 1 tbsp. Fresh Lemon Juice
- 2 tsps. Olive Oil
- 1 tsp. Dijon Mustard
- ½ tsp. Honey
- Salt and Pepper, to taste

Preparation
Step 1
Bring a small pot of water to a boil.

Add baby potatoes and cook for 12–15 minutes, or until fork-tender.
