Ingredients

  • 8 Large Eggs
  • 1 Cup Egg Whites
  • 3 Cups Baby Spinach, chopped
  • 1 Cup Mushrooms, sliced
  • ¼ Cup Crumbled Goat Cheese
  • 1 tbsp. Chopped Fresh Chives
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • Salt and Black Pepper, to taste
  • Cooking Spray

Preparation

Step 1

Preheat the oven to 375°F and lightly coat an 8×8-inch baking dish with cooking spray.

Step 2

Heat a nonstick skillet over medium heat and sauté the mushrooms for 4–5 minutes until softened. Add the spinach and cook for 1–2 minutes until wilted. Remove from heat.
