Ingredients
- ½ cup Cooked Lentils
- 5 oz. Firm Tofu, cubed
- ½ cup Zucchini, diced
- ½ cup Spinach
- 2 tbsp. Feta Cheese
- 1 tsp. Olive Oil
- Garlic Powder, Salt, Pepper

Preparation
Step 1
Heat olive oil in a skillet over medium heat.
Step 2
Add tofu and cook for 4–6 minutes until lightly golden on the edges.
Step 3
Add zucchini and sauté until softened.
Step 4
Stir in lentils and spinach and cook until warmed through and spinach is wilted.
Step 5
Remove from heat and top with feta cheese.
Step 6
Season with garlic powder, salt, and pepper
